A S U P E R simple + quick + HEALTHY Banana bread recipe for you all.

I know you ALL have over ripe bananas kicking around - if you don't you should. Spotted bananas are the B E S T and essentially the best way to eat + digest them. The carbs and sugars can be metabolized by the liver more optimally, and they are assimilated more readily. It's all about the spots guys.

This bread is literally just 4 ingredients (5 if you want to add a bit of natural sweetener) - No excuse not to make it!


-4 Very Ripe Bananas -2 Cups spelt flour (you could use buckwheat, or any gluten-free flour that you enjoy) -1/2 TBSP Baking Powder -2 TBSP chia seeds ( which is used as a binder - aka a vegan egg!) ** optional sweetener - I used about a teaspoon of raw coconut sugar - if you want it sweeter you could add a tsp to TBSP of raw honey or maple syrup) Remember though, bananas are already super sweeeeeet.

1) Make your 'chia egg' add 6 TBSP's of water to the 2 TBSP of chia seeds. Set aside for 15-20 minutes. It will create a binding gel!

2) Mash together the bananas with a fork - leave chunky bits. Add in the chia egg.

3) Gently stir in the flour - folding it in as you don't want to disintegrate the banana chunks. Add in Baking Powder and optional sweetener.


Place it in a loaf tin that has been lined with parchment paper and BAKE AT 180c OR 350f from anywhere to 40-50 minutes. I had to play around with this. Set it for 40 minutes and check it at 40 minutes. Because it is SO dense and 'gooey' it might need a little longer to bake. Don't over do it, but it's easy for this to be taken out to early. I left mine in for 48-50 minutes, but this is also dependent on your oven. Just keep your eye on it!

This isn't your normal BB, as it's more dense, and not as fluffy, BUT that's what makes it so yummy + HEALTHY!
