Cinco De Mayo was last week, but tacos are here to stay.

With summer quickly approaching, these bad boys will make the perfect evening dinner, as the nights get longer, sweeter and the air is like a warm hug, on a starry summers eve. 

Who says tacos can't be healthy, light, highly nutritious, yet utterly delicious?

This recipe is here to convince you that you can still indulge in one your favorite summer cuisines, while saying goodbye to mexican induced indigestion, heart burn and taco sweats. I'm sure you all know what I'm talking about! 

The hero in this recipe is turmeric. The anti-inflammatory properties in this miraculous root is hard to rival. It's not only known to reduce pain, swelling, and inflammation in joints, decreases acne, is now being replaced where steroids are administered, while being a superhero in cancer treatment of tumors. Recent research is showing that the active component in turmeric, curcumin, is able to kill cancer cells on contact, while helping prevent future ones from growing. Good things, sure do come in small packages. Turmeric is not to be overlooked, and in my humble opinion, the more you consume, the better. 

Which is why it's the star of these tacos! It's my favorite thing to 'healthify' popular foods, while taking it one step further and adding a healing component to the food. Food can be pleasurable, mouth watering, while still being insanely nutrient dense and healing, leaving you feeling vital, instead of vile. 

How best to consume this recipe. 

Picture this: Taco night with the girls! 

You plan a girls night at your house, you prep all of the ingredients individually (which I've broken down below), and you get your girls to make their own! It's way more fun when you can touch, feel, and interact with the food you're about to consume. It's even shown to have positive physical affects in the way your food is digested, and assimilated. 

Have the toppings in little bowls, use your hands to make as many taco's as your heart desires, and laugh into the moon glazed night. 

Food is meant to be shared, enjoyed and celebrated with others.

This recipe allows you to do just that, while leaving your guests glowing, healthy and completely satisfied from head to toe.

Not to mention leaving them with a turmeric glow!

Recipe makes 6-8 


What you need:

-2 dry cups of quinoa 

-1 head of cauliflower

-small head of romaine 



-sun dried tomatoes


-sprouts - I used broccoli as they are my favorite


-pink salt 


-ACV - Apple Cider Vinegar 


What to do:


-Cook quinoa to your own taste. I use two cups of quinoa to four cups of water. Bring to boil, then simmer for ten to fifteen minutes. I usually check after the ten minute mark, just to see, but it often takes a little longer. 

-Roast Cauliflower. Break up the head into a big mixing bowl. Sprinkle with cayenne, pink salt, a generous dousing of ACV, and around two TBSP's of turmeric, depending on your taste preference. Toss! Place onto baking sheet with parchment paper, and roast at 375 F for around 35-40 minutes, or until soft.

-Wash and prep lettuce leaves. I use romaine, but you can also use Bibb lettuce. If you want to amp up your greens even further, you can definitely use chard or collard wraps. I love the crunch and taste of romaine, so it's what I always use. 

-Make the dressing! This dressing is next level guys. I use it on everything, and it's very addicting, I'm warning you. I put around half a cup of tahini, a squeeze of half a lemon, one TBSP of turmeric, and 1/4 cup of ACV. I stir it for awhile, and then add water to thin it out. If it's really thick, add about a TBSP of water at a time, so you don't thin it out too much, or else the tacos will be a giant mess to eat. 

-Cut up and prepare the remainder of the ingredients! I've used sundried tomatoes, sauerkraut and broccoli sprouts (these beauties will be getting a post on their own. They are one of the healthiest and healing foods on the planet, and are extremely underrated).

- Place into bowls. VOILA! DIY tacos.
