As I'm sure you've noticed I don't post a lot of recipes on here. This is for two reasons 1) I'm a creature of habit and thoroughly enjoy eating similar dishes / foods on a regular basis. I tend to play favorites when it comes to my veggies, but I'm working on switching it up more often. 2) I eat very simply. Whole foods, lots of plants, vegetables, lots of raw vegetables to retain their enzymes and minerals and don't like a lot of sauces / dressings. Wild fish, organic chicken and bone broth make a weekly appearance, but they aren't daily staples. I believe in the medicinal properties of food, and eat foods on a much deeper level, and also because these foods give my great joy! Seriously. Start talking to me about cucumbers, radishes, melons and greens and my eyes light up. I think I scare people away sometimes with my love for it all. (*more to come, as I'm going to get into doing some videos for you soon so you can actually see this craziness*) but they make me feel sooooo good that I won't ever stop singing their praises.

I've been thinking a lot about this, and this is actually why I should start posting more recipes! You, my family and friends, strangers are always saying they are too busy to cook, eat at home or make meals. So if I have recipes that are simple, quick, highly nutritious why wouldn't I share them more? And with my love of super nutrient dense foods, they are a win-win for everyone. Time saving and super power giving. Okay, not joke, just writing this post is getting me excited about what I'm about to share.

My Glow Salad is always changing, but this is usually my main stay. It took me less than five minutes to make, is protein and mineral rich and will give you energy for hours.

Why is it so great, just a little 411 on it's 'glowifying' properties:

KALE - kale is king, as is one of the most nutrient dense foods on the planet. It contains omega 3 fatty acids, heaps and heaps of Vitamin A, C ( A cup of raw kale even contains more vitamin C than a whole orange) and K which give your skin a magical luminescence to it, and minerals for days - calcium, magnesium and potassium.

SUNFLOWER SEEDS - These aren't just for birds, they are rich in Vitamin E, copper, B Vitamins like thiamine, phosphorus, and selenium (essential for hormone balancing). Sunflower seeds, like nearly all types of nuts and seeds, provide a healthy source of essential fatty acids; which are what give your skin + hair their highly shine!

PUMPKIN SEEDS- Zinc, Zinc, Zinc! Pumpkin seeds are one of the highest sources of zinc which is essential for your bodies immunity, healing capabilities, sleep patterns, moods and more. Do you break out and the red mark that is left behind take forever to heal? Does it turn an almost purple-like color? This means your body is low in ZINC. Your body / skin isn't regenerating properly or efficiently. If you're always getting sick, you're probably also low in this miracle mineral. Aren't sleeping well? Could be low-zinc levels..... these seeds truly are one of the worlds healthiest foods.

RADISHES- My beloved radish. Truth be told I never used to like them! I thought they were bitter, pungent and too spicy. Now I can't live without them. I eat them raw with some salt and sunflower seeds, I roast them with avocado oil and put them in soups come winter. I don't think they get enough love for all that they contain + give to us, just to name a few: Folate, fiber, riboflavin, and potassium, as well as good amounts of copper, vitamin B6, magnesium, manganese, and calcium . It's probably no surprise that radishes contain fiber, aka indigestible carbohydrates. This keeps your system flushed and functioning with regularity and also aids in maintaining a healthy weight! These beautiful tubers are also a natural diuretic, purifying the kidney and urinary systems and relieving inflammation...They also contain a lot of sulphur which help maintain healthy, nourished and clear skin from the inside out.

  • Whole bunch of organic kale (I choose organic greens and ingredients, if you can't find organic see if local is available!)
  • 5 radishes
  • 2 TBSP sunflower seeds
  • 2 TBSP pumpkin seeds
  • 2 TBSP raisins

Massaged with:

  • 1 TBSP avocado oil
  • 1 TBSP tahini
  • 1 TBSP apple cider vinegar
  • Juice of one whole lemon
  • Pinch of salt

Place raw kale in a bowl - add the dressing above and massage for 2 minutes to break up the fibers in the kale! I love doing this, as I love connecting with my food and imparting love and energy into it :)

VOILA! That is it. Add in the other ingredients, give it one last massage and your good to go. This makes the perfect breakfast, lunch or dinner. If you need a little more protein I would add a piece of wild fish / chicken or some lentils / chickpeas. If I have them on hand I also will top this with SPROUTS - another one of my loves. My favorites are sunflower or broccoli.

I hope you enjoy it as much as I do!

*** ALSO I would love to hear if you want to see more of this, and if videos are something that your interested in? :) I haven't done them out of fear, but things are shifting and I'm ready to open up, share and bring you into my world a little bit more.

Enjoy the rest of your weekend + Big Love,
